Buffalo: the most commonly told origin story of the wing
Buffalo is widely credited as the birthplace of the Buffalo wing. The most commonly told account traces it to the Anchor Bar, still operating today at its original Main Street location, where Teressa Bellissimo is said to have created it on March 4, 1964. Every Labor Day weekend since 2002, the National Buffalo Wing Festival has drawn crowds that add up to more than 500,000 visitors over the years, with an eating contest that has crowned champions like Joey Chestnut and Miki Sudo.
Bakersfield: a documented Basque legacy since 1938
Bakersfield has one of the most well-documented Basque-immigrant food-culture legacies in the country. The Kern County Basque Club was founded in 1938 by descendants of Basque sheepherders who settled in the area, and Wool Growers Restaurant, serving family-style Basque menus in Old Town Kern since the 1950s and 60s, is still open today.
Amarillo: a free steak, if you can finish it
The Big Texan Steak Ranch, open on Route 66 since 1960, is home to the 72-ounce steak challenge: finish the steak and sides within an hour and it's free. Competitive eaters Joey Chestnut and Molly Schuyler hold the speed records, at 8 minutes 52 seconds and 4 minutes 18 seconds. Most people who try do not finish, which is exactly what keeps the challenge a national talking point more than 60 years later.
